What You’ll Need For The Waffles:
- 2 cups spelt flour

3 tbsp Cashew Milk Powder
- 2 tsp. baking powder
- 1 tsp. cinnamon
- Pinch of sea salt
- 2 cups water
- 1/3 cup avocado oil
- 2 eggs

1 tsp. vanilla
- 1-2 tbsp. maple syrup (optional as I always sweeten the waffles after they are baked.)
What You’ll Need For The Whipped Cream:
- 1 can coconut milk (400ml) refrigerated overnight
- 1 tbsp Beet Latte Powder
- Icing sugar (amount depends on desired sweetness)

Preparation:

Mix all of the dry ingredients for the waffles together. Add in the liquid ingredients and stir until just combined. Bake using a waffle maker.⠀⠀⠀⠀⠀
- For the beet whipped cream, Separate the thickened coconut cream from the water and put the thickened part into a mixing bowl. Add the Beet Latte Powder and icing sugar. Using a mixer, beat for 30 seconds-1 minute, until smooth. Adjust sweetness if needed. Top waffles with whipped cream, fresh berries and maple syrup!
