What You’ll Need:
- 1 medium ripe banana
- 1/3 cup baru butter or nut/seed butter of choice
- 1 tbsp of our coconut oil, melted
- 3 tbsp of our coconut palm sugar
- 1 sprouted chia/flax egg (1 tbsp of chia/flax meal + 2 ½ tbsp water)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp sea salt
- 1/3 cup almond meal (ground almonds)
- 3/4 cup almond flour

1 bar of chocolate, roughly chopped or about 1/2 cup chocolate chips

- Prep Time: 10 minutes
- Bake Time: 15-20 minutes
Preparation:
- Preheat oven to 350° F and line a baking sheet with parchment paper
- Make your chia/flax egg by mixing chia/flax powder with water and letting it sit for a few minutes
- In a large bowl, combine chia/flax egg with your banana and mash
- Add the rest of your wet ingredients and stir well
- Next, add your dry ingredients and combine
- Once your mixture is ready, fold in your chopped chocolate
- Using an ice cream scooper or spoon, portion (about 2 tbsp) your cookies onto your parchment lined baking sheet.
- Bake for roughly 15 minutes or until golden brown
- Allow your cookies to rest before moving to a cooling rack.
- Cookies can be kept in the freezer for up to a month!
