Healthy Ginger Cookies

    What You’ll Need:

    • 3/4c quinoa flour ⁠
    • 1/2 tsp baking soda⁠
    • 2 tsp powdered ginger⁠
    • 1 tsp cinnamon⁠
    • 1/4c monk fruit sweetener⁠
    • 3 tbsp yacon syrup⁠
    • 1/2c almond butter⁠
    • 3 tbsp coconut oil (melted)⁠
    • 1 egg⁠
    • 1 tsp vanilla extract⁠


              Dairy Free - Refined Sugar Free - Gluten Free 

              • Prep Time: 10 minutes
              • Freeze Time: 15 minutes

                Preparation:

                1. Preheat your oven to 350.
                2. Combine all ingredients in a bowl and mix well - if too oily with the almond butter and coconut oil, add a bit more flour.
                3. Scoop onto a parchment lined baking sheet, slightly flatten with your hands (they won’t expand too much) and bake for 13-15 minutes. ⁠
