What You’ll Need:
For the base:
For the filling:
- 1 ½ cups cashews, soaked in boiling water for at least
20 mins (drain)
- ½ cup coconut oil, melted
- ½ cup canned coconut milk (shaken)
- ½ cup dates, soaked in boiling water for 2 mins (drain)
- 1-2 tbsp hot water
- 2-3 tsp matcha

- Prep Time: 20 minutes
- Chill Time: 1 hour
- Yields: Roughly 12 servings
Preparation:
- Line the bottom and the sides of a 8" x 4" baking pan with parchment or wax paper.
- In a food processor, chop 1 cup dates with almonds and 2 tbsp melted coconut oil. Press firmly into the bottom of the pan.
- Blend the ½ cup of melted coconut oil, ½ cup canned coconut milk, ½ cup soaked dates, 1 ½ cup cashews and matcha in a blender until smooth.
- Add 1 tbsp of hot water at a time to help the mixture blend. Pour over the date and almond crumble and garnish with desired toppings. Allow it to set in the freezer for at least
an hour.
